Ingredients:

  • 1 cup split yellow moong dal, soaked for 3-4 hours
  • 1/2 cup rice soaked in water for 3-4 hours
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped tomato
  • 1/4 cup chopped coriander leaves
  • I teaspoon jeera seeds(cumin)
  • 1 teaspoon haldi
  • 1 green chilli, finely chopped (optional)
  • 1/2 teaspoon ginger and garlic paste
  • Salt to taste
  • Oil or ghee for cooking

Method:

  • Drain the dal and rice.
  • Heat the oil/ghee in a pressure cooker.
  • Add the jeera seeds and let them splutter.
  • Add the chopped onions and cook for a bit till it turns slightly brown.
  • Add in the ginger and garlic paste and cook for a further minute or two.
  • Mix in tomato, green chilli, haldi, and salt and let it cook till the tomatoes are soft.
  • Add in the soaked moong dal and rice and give it all a good mix.
  • Add two and a half cups of water and close the lid.
  • Cook it for around three whistles and switch off the gas.
  • Let the cooker lid open and then add chopped coriander leaves and mix it.
  • Serve hot with a dollop of pure ghee.

Spaghetti with Avocado Sauce

Kareena Kapoor Khan is a self-confessed pasta lover, and this wholesome recipe is one of her favourites. In an interview with Pinkvilla, Kareena mentioned that she enjoys a plate of spaghetti with avocado sauce at least once a week. Ingredients:

  • 8 oz whole wheat spaghetti
  • 2 ripe avocados, halved, seeded, and peeled

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Instructions:

  • Cook spaghetti according to package instructions until al dente. Drain and set aside.
  • In a food processor, combine avocados, garlic, basil leaves, olive oil, and lemon juice. Process until smooth and creamy.
  • Season the avocado sauce with salt and pepper, adjusting to taste.
  • Toss the cooked spaghetti with the avocado sauce, ensuring the pasta is evenly coated. 
  • Serve immediately.

Quinoa and Vegetable Stir-Fry

  • Drizzle with olive oil and lemon juice, then season with salt and pepper. 
  • Toss to combine.
  • Top the salad with sliced grilled chicken and serve.

Bajra (Pearl Millet) Roti with Vegetables

Ingredients:

  • 1 cup bajra (pearl millet) flour
  • 1/2 cup water, or as needed

Instructions:

For Bajra Roti:

  • In a mixing bowl, combine the bajra flour with water, adding gradually while kneading until a smooth, non-sticky dough is formed. Cover and let it rest for 15-20 minutes.
  • Preheat a non-stick skillet or tawa over medium heat.
  • Divide the dough into small balls. Using a rolling pin or your hands, flatten the balls into thin, round discs (rotis).
  • Cook each roti on the preheated skillet for 2-3 minutes per side or until they puff up and have light brown spots. Keep cooked rotis wrapped in a cloth to retain warmth.

For Vegetables:

  • In a large skillet or pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Add the ginger-garlic paste and cook for another minute, stirring frequently.
  • Add the chopped tomato and cook until it softens and breaks down about 4-5 minutes.
  • Stir in the chopped mixed vegetables and cook for 5-7 minutes until they are tender but still maintain their shape.
  • Add turmeric powder, coriander powder, cumin powder, red chilli powder (if using), and salt. Mix well to combine and cook for another 2-3 minutes, allowing the flavours to meld.
  • Serve the vegetable mixture with warm bajra rotis on the side. 
  • Enjoy!
