Rice Cutlet ( Leftover Rice )

* 1 cup cooked rice

* 1 potato boiled & mashed

* 2 tbsp carrot grated

* 2 tbsp capsicum chopped

* 2 tbsp corn

* 2 tbsp cashew / kaju chopped

* ½ tsp ginger paste

* ½ tsp kashmiri red chilli powder

* ¼ tsp garam masala

* ¼ tsp cumin powder

* ¾ tsp salt

* 2 tbsp coriander finely chopped

* 1 tsp lemon juice

* ½ cup bread crumbs

* ¼ cup maida / plain flour

* 2 tbsp corn flour

* ½ tsp pepper powder

* ¼  tsp salt

Recipe :

🍽 Take a bowl, add cooked rice and mash it smooth. Now add potato, carrot, capsicum, corn, cashews, ginger garlic paste, red chili powder, cumin powder, garam masala, salt, lemon juice, coriander leaves, and bread crumbs. Mix well and make a lemon sized ball.

🍽 Now take another bowl and mix cornflour, maida, pepper powder, and salt by adding little water for coating rice balls.

🍽 take a cutlet and dip it in the cornflour mix and roll on the bread crumbs and deep fry in the oil. Serve hot with ketchup.

P.s: I used fresh bread. I just mashed the bread with hands and mixed it in the dough. I didn't coat with bread crumbs. It still tasted yummy. It really observed less oil due to cooked rice. A good and healthy snacks for kids and adults.
