2 kg carrots grated
2 l milk
1tbsp cardamom powder
15 to 20 raisins
15 to 20 almonds soaked and cut
1 cup sugar
3/4 cup ghee
Boil milk in a pan. Add grated carrots and let it simmer for 30 mins.
Add cardamom and raisins and let it simmer till the milk is absorbed by the carrots
Add sugar at this stage and allow the carrots to be cooked well.
keep stirring in between so that the carrots do not get burnt
add ghee and mix the carrots well.
remove from the stove.
garnish with chopped almonds.
ps-never pressure cook the carrots to retain the texture of the carrots
you can also add mawa on the top and serve hot
