Navratri Special: Kuch Soul Food Ho Jaye, Kuttu Khichdi Recipe

Ingredients:

Buckwheat (Kuttu ka Aata): 1 cup
Dahi: ½ cup
Oil /ghee: 2 tsp
Boiled potatoes: ½ cup cut into cubes.
Ginger-chillI paste: 1 tbsp
Cumin seeds: 1 tsp
Salt (Sendha namak) : To taste
Roasted Peanuts ( Coarsely ground or as they are): 2 tbsp
Lemon: half
Coriander: finely chopped to garnish.

 

Method:

Soak the buckwheat in enough water for 2 hours. Drain the water and slightly steam the buckwheat.
Take a heavy bottom non-stick pan or iron kadhai. Take oil and heat. Add the jeera till it splutters. Add curry leaves (optional), boiled potatoes and mix well.
Add ginger-chilli paste, steamed kuttu and peanuts. Mix well.
Add dahi and salt and mix well again.
Place a lid and let it cook for 2 minutes.
Add the lemon juice after you switch off the flame and mix thoroughly.

Tadaaa!

Your low calorie Healthy Kuttu khichdi is ready. Have it with Raita for lunch or dinner.
