Healthy Snack Idea: Spinach And Oats Idli

Ingredients:

  • Oats: 1/2 cup
  • Suji: 1 cup
  • Spinach: 15-20 leaves
  • Curd: 1/2 + 1 1/2 cup
  • Eno: 1 tsp
  • Lemon juice: 1 tsp
  • Dry red chili: 5 (optional)
  • Asafotedia: a small pinch
  • Cooking Oil: 1 tbsp
  • Rai: 2 tsp
  • Curry leaves: 5 leaves
  • Green chilly: to taste (optional)
  • Salt to taste.

 

Method:

For Spinach puree:

Wash and light blanch spinach leaves. Churn and strain the mixture to get a purée.

For Batter:

Mix powdered oats, suji, salt, 1/2 cup curd, lemon juice, spinach  purée. Add water as required to get a consistency of an idli batter. Then Add eno in the last just before when you are about to put the idlis in the mould. .

 

Using Curd:

Strain 1 1/2 cup of curd and add water to make a  thin raita like consistency.

 

 

For Tadka: (This step is only for mommies, avoid this when you serve the dish to your toddlers)

Heat cooking oil in a pan and add rai, curry leaves, green chilly, asafOtedia, dry red chilly. Cook well till it makes a crackling sound.

Add the batter in the idli mould and let it steam to perfection. Once the idlis are ready serve with curd on top for your toddler and for you add some tadka to give it that kick.

Tadaaaa your healthy and super yummy idlis are ready!
