Three super easy and super yummy dessert recipes for you and babies! Try them out and let me know how you liked them.

 

1. Coconut Banana Berry Custard (can be given to  babies 6 months plus)

Ingredients:

  • Fresh coconut milk – 1 cup
  • Grated fresh coconut – 1 spoon
  • Banana – half
  • Berries of your choice – I make it with blackberries (optional)
  • Grated nuts (if you are offering dry fruits and have tested that baby  is not allergic)

 

Method:

  • Whip everything in a mixer (except grated coconut)
  • Pour in a ceramic/glass bowl
  • Garnish with nuts and grated coconut
  • Take ice cold water in a big bowl, place the custard bowl carefully and let it chill (I don’t chill it directly in fridge)

 

Trust me babies love thanda thanda custard!

2. Ragi Carrot and Dates Cake

 

Ingredients:

  • Ragi (nachni/millet) powder – half cup
  • Carrots – half carrot grated
  • Dates – 2 dates soaked in hot water
  • Curd – 1/2 cup
  • Ghee – to grease the mold and 2 spoons for cake batter

 

Method:

  • Mix ragi powder, curd, grated carrots (you may add apples)
  • Puree the dates and add in the ragi mixture
  • Add ghee and whisk the batter well for a good 4-5 minutes
  • Grease a silicon or glass mould with ghee and pour the cake batter
  • Bake on convection mode for 10-15 minutes (depending on the microwave)
  • Prick a tooth pick in the cake and it shall come out clean

 

Let it cool, demould the cake, cut into pieces and serve!

3. Dates Peanut Butter (only give to baby if you tested for nuts allergy

Ingredients:

  • Peanuts – half cup
  • Dates – 3-4
  • Ghee – 4-5 spoons
  • Roasted faux nuts (makhana) – 50 gms

 

Method:

  • Deseed the dates and grind everything in a grinder and add ghee while grinding
  • Store it in a glass jar (It stays good for a week )
  • Offer it with roti/chapati

 

Babies love it!
