Tiffin Recipe: Healthy Veggie Pancakes

Pancakes is something I prefer for kids tiffin boxes and even for outings. Reason being they are healthy, nutritious and non messy.Yes, be it a car or a flight, I personally like to carry foods that are non messy..

On weekdays when there is almost tug of war in the mornings, I prefer making  pancakes, cheelas, uttapams as these can be rolled out and given like a wrap which kids can even eat on the bus or van.

 

Today morning our family breakfast was this all-in-one healthy pancakes.  Here’s the easy recipe:

 

Ingredients:

  • Wheat flour ¼ cup
  • Besan ¼ cup
  • Rawa fine quality ¼ cup
  • Oats 1/4 cu
  • Ragi powder 2 tbsp
  • Rice powder 2 tbsp
  • Finely chopped onions
  • Ginger grated
  • Chopped coriander leaves
  • Salt to taste
  • Red chilli to taste
  • Turmeric powder
  • Grated bottle gourd ¼ cup
  • Grated and deseeded tomato ¼ cup
  • Water as required

 

Method:

  • Mix all the ingredients nicely so that they are lump free and you can change or add vegetables according to your or kids preference.
  • Heat tawa and pour the batter with a ladle and sprinkle little oil or butter on the sides.Once done, flip the side and let it cook.

 

Serve hot with green chutney and tomato sauce.
